Total Time: 20 mins
Cuisine: Vietnamese
Serves: 4 servings

Ingredients

  1. 8 rice paper wrappers
  2. 1 lb cooked shrimp, halved
  3. 1 cup lettuce, shredded
  4. 1/2 cup carrots, julienned
  5. 1/2 cup cucumber, julienned
  6. 1/4 cup fresh mint leaves
  7. 1/4 cup peanut hoisin sauce

Instructions

  1. Prepare all ingredients by washing and cutting vegetables: shred lettuce, julienne carrots and cucumber, and pick fresh mint leaves.
  2. Fill a large, shallow dish with warm water for softening rice paper wrappers. Ensure water is comfortably warm but not hot.
  3. Dip one rice paper wrapper into warm water for approximately 10-15 seconds until it becomes pliable but not completely soft. Remove and place on a clean, damp kitchen towel.
  4. Arrange cooked shrimp halves in a horizontal line near the bottom third of the wrapper, leaving about an inch of space on each side.
  5. Layer shredded lettuce, julienned carrots, cucumber, and fresh mint leaves on top of the shrimp.
  6. Carefully fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly upward to create a neat, compact summer roll.
  7. Repeat the process with remaining wrappers and ingredients, keeping completed rolls covered with a damp towel to prevent drying.
  8. Serve immediately with peanut hoisin sauce for dipping, ensuring rolls are fresh and wrapper is soft and translucent.

Tips

  1. Water Temperature is Key: Use warm (not hot) water to soften rice paper. Too hot, and the wrapper will tear; too cold, and it won't become pliable.
  2. Work Quickly: Once the rice paper is softened, work swiftly to prevent it from becoming too fragile or sticky.
  3. Don't Overfill: Resist the temptation to add too many ingredients. Overfilling makes rolling difficult and can cause tears.
  4. Keep Rolls Covered: Use a damp towel to cover completed rolls, preventing them from drying out and becoming tough.
  5. Chill Your Ingredients: For extra refreshing summer rolls, ensure your vegetables and shrimp are well-chilled before assembling.
  6. Practice Makes Perfect: Your first few rolls might look messy, but don't get discouraged. Rolling technique improves with practice!
