Prep Time: 15 mins
Cook Time: 25 mins
Total Time: 40 mins
Cuisine: French
Serves: 4 servings

Ingredients

  1. 2 lobsters, cooked and chopped
  2. 1 tablespoon olive oil
  3. 1 onion, diced
  4. 2 cloves garlic, minced
  5. 1 carrot, diced
  6. 4 cups seafood stock
  7. 1 cup heavy cream
  8. Salt and pepper to taste
  9. 1 tablespoon tomato paste

Instructions

  1. Prepare the lobster by removing meat from shells. Chop lobster meat into bite-sized pieces and set aside. Reserve lobster shells for additional flavor.
  2. Set Instant Pot to Sauté mode. Add olive oil and heat until shimmering. Add diced onions, minced garlic, and diced carrots. Sauté for 3-4 minutes until vegetables become soft and fragrant.
  3. Stir in tomato paste and cook for an additional 1-2 minutes to caramelize and enhance flavor depth.
  4. Add seafood stock to the pot, scraping bottom to release any browned bits. This will help develop rich flavor base for the bisque.
  5. If desired, add reserved lobster shells to intensify seafood flavor. Close Instant Pot lid, set valve to sealing position.
  6. Pressure cook on high for 10 minutes. Allow natural pressure release for 5 minutes, then quick release remaining pressure.
  7. Remove and discard lobster shells. Use immersion blender to puree soup until smooth and creamy.
  8. Stir in heavy cream and chopped lobster meat. Season with salt and pepper to taste.
  9. Allow bisque to simmer on Sauté mode for additional 3-4 minutes to heat through and meld flavors.
  10. Serve hot, garnished with fresh herbs or additional lobster meat if desired.

Tips

  1. • For maximum flavor, use freshly cooked lobster and save those shells! They're liquid gold for enhancing the bisque's depth. • When sautéing vegetables, take your time to develop a good caramelization - this builds incredible flavor complexity. • An immersion blender is key to achieving that silky-smooth texture, but if you don't have one, a regular blender works too. • Don't rush the natural pressure release - it helps develop richer flavors. • For an extra luxurious touch, garnish with fresh chives, a drizzle of cream, or a sprinkle of paprika. • If you prefer a thicker bisque, you can add a tablespoon of cornstarch mixed with cold water before the final simmer. • Leftover bisque can be stored in the refrigerator for 2-3 days - it often tastes even better the next day!
