Instructions

  1. Preheat the oven to 325°F (165°C). Line a 9x13 inch baking pan with parchment paper, allowing excess paper to hang over the sides for easy removal.
  2. In a large mixing bowl, roughly chop the nuts into smaller pieces, keeping some chunks for texture. Mix the chopped nuts with seeds and unsweetened shredded coconut.
  3. In a separate small saucepan, combine honey (or maple syrup), coconut oil, vanilla extract, and salt. Heat over low heat, stirring continuously until the mixture is well combined and slightly warm.
  4. Pour the warm liquid mixture over the nut and seed blend. Stir thoroughly to ensure all dry ingredients are evenly coated.
